A BIG FAT ITALIAN SUNDAY DINNER

Pictured are my Grandma Eleanor and Grandpa Tony at my baptism. I don't remember this day but I have a good idea of how it went. It was A Big FAT ITALIAN SUNDAY DINNER!

I am going share the best recipe ever for Red Sauce. Grandpa Tony and Eleanor fought their whole married life on who made better sauce. Over the years my mother learned to cook from my grandparents. She would ask for a recipe and they would proudly write it out on a little recipe card or two. After observing both of them cook enough she realized they had basically the same recipe. Both of them left little things off the recipe cards. I don’t know if it was on purpose or in error. We spent every Sunday at their house. My aunts, uncles and cousins would all congregate for A BIG FAT ITALIAN SUNDAY DINNER. During our visits my doting grandparents served all the traditional Italian courses. We wanted to help but they took such pride in their cooking that they didn’t want us in their kitchen. They only wanted us to come and eat and eat and eat and eat!
Grandpa Tony would say, “What da matta you don’t likea my sauce?”
Me: " No, No Grandpa, it's delicious! I have already eaten anti pasta, zuppa, pasta, meatballs, & brozole I am so full!”
Grandma Eleanor would yell “Tony I told you! You over salted the sauce!”
Grandpa Tony would yell, “You breaka my heart!”
What’s A BIG FAT ITALIAN SUNDAY DINNER without guilt!
I loved my Grandparents so much and think of them all the time. This sauce runs through my veins.

The Family Red Sauce

This is to make a lot of sauce. Freeze what you don’t use for a trip to the mountains or for a rainy day! You need to be home most of the day to make this so you can stir it about every half an hour. You can have this with Italian sausage and Meatballs. I have the Meatball recipe below.

1 extra large stockpot
Cover the bottom of the pot with olive oil – approx. 3-4 tablespoons
Sauté 15 cloves of garlic minced – I put it in the Cuisinart with a metal blade.
For about 2 minutes on medium heat.
Add
3 large 28 oz cans of Progresso whole roma tomatoes
3 large 28 oz cans of Progresso crushed roma tomatoes (with puree)
2 large 28 oz cans of Progresso roma tomato puree
3 cups of water
2 T. dried orange no
2 T. dried basil
2 T. Salt
3 T. sugar
Season with Lawry’s garlic salt (Note: my Grandpa Tony said there isn’t another garlic salt!)
Keep 1 small can of Progresso tomato paste for later…

Cook over Medium heat to get it hot then reduce heat to low. Stir to the bottom of pot every half an hour (to be sure it does not burn on the bottom.) Cook a minimum of six hours but it is better to cook it for 8 hours.

After you have the sauce started.
Start making the meatballs. Mix all the ingredients below with your hands.

6 lbs of ground beef (I usually get 3/4 top sirloin and 1/4 of the packages a lightly higher fat content)
3/4 cup of Progresso Italian bread crumbs
6 eggs
1/4 cup of good Parmesan grated
Season with Lawry’s garlic salt
Pepper and kosher salt.
Make Meatballs in the palm of your hand very compacted. Approx. 3”.

In batches or use 2 skillets cover the bottom of pan with olive oil. Heat the oil over med- high flame. Add the meatballs, cook each side until nicely browned and crusted. Add to the sauce. The inside does not need to be fully cooked- it will cook in the sauce.

About an hour before… serving remove the meatballs with slotted spoon and but in a baking dish add a little sauce and cover with foil. You can put it in the oven on low to keep hot if you wish. Check the consistency of the sauce. If it is not thick enough add some tomato paste. If it is too thick add more water. Also check the flavor… adds more garlic salt, salt and pepper to taste.

You can serve this sauce with any pasta. If you decide to make Italian sausage with this cook the sausage fully in skillet and add to the sauce with meatballs. Enjoy!

I love the story, I could just picture all of you! My grandpa was the same way: We would just come back from dinner, then stop by to see the grandparents...Grandpa lived in the kitchen...he would FORCE us to eat, even if we just did and
he wouldn't take no for an answer!

The sauce sounds fantanstic, I'll try it out sometime next week. I've ALWAYS wanted to try a sauce that takes 8 hours of hard labor...I'm wondering if I would ruin it by using the "lazy" slow cooker?
